Favorite Black Beans

As a side dish or part of our Chicken Fajitas meal, black beans are anti-oxidant rich and good for your heart.

INGREDIENTS

  • 2 tablespoons coconut oil
  • 1 shallot, peeled and minced
  • 1 large tomato, cored and diced
  • 1 16oz can organic black beans, rinsed and drained
  • 1⁄2 teaspoon sea salt
  • 2 tablespoons fresh cilantro, chopped

DIRECTIONS

1. Heat the coconut oil in a small pot over medium heat, once  the oil is hot add the shallot and cook until softened, about 2  minutes. Add the diced tomato and cook for another 2-3  minutes. 

2. Add the black beans and salt to the pot and turn the heat to  high. Once they are at a full boil, turn the heat down and  simmer for about 12-15 minutes. 

3. Stir in the cilantro, let cool slightly and serve with just about anything!
